Driftwood's house roasts are made in small batches, twice a week, on-site in Fremantle. Available as 250g and 1kg bags — whole bean or ground to order at the bar.

Why small batches matter

We only roast what we can taste properly.

Every bag of Driftwood coffee started its life in a small drum roaster a few metres from the espresso machine. We don't pre-roast weeks in advance or warehouse bulk stock — we roast twice a week so the beans that reach your cup are close to the day they were transformed.

Small batches let us log every roast curve, cup each lot before it hits the shelf, and adjust with the weather, the season, and the green stock we have in hand. The four house roasts below are the ones that earned their place and stayed.

Four distinct coffees, each dialled for a different cup. Available in 250g and 1kg bags — whole bean, or ground to order at the bar. Ask what day they were roasted; we always know.

Our anchor roast — the one that has been on the drum since the very first week. Roasted dark enough to hold up under milk without going bitter, and rounded enough to drink black. If you only try one, start here. This is the coffee most regulars keep at home.

Caramel · Almond · Ripe plum

The in-between roast — medium-bodied, gentle on acidity and sweet right through the finish. It brews clean as a pour-over and pulls a textbook flat white. A good first bag for someone moving from supermarket coffee to something worth paying attention to.

Southerly

Jasmine · Stone fruit · Honey

Light-roasted, lifted and delicate — made for the people who want their coffee to taste like fruit and flowers rather than roast. Pull it as a slow V60 or steep it overnight for cold brew and the honey sweetness comes forward cleanly. A cooler cup for warm Fremantle mornings.

Our rotating single-origin — the one that changes when the green stock does. Roasted to highlight what the particular lot does best, whether that's a punchy espresso or a washed filter cup. Ask what's on the roaster today; it changes with the season and we'll tell you exactly what's in the bag right now.

We don't sell online yet — every bag leaves the counter directly so we can answer your questions face to face and match you to the right roast for your brewer.

Pick from Driftline, Harbourmaster, Southerly or First Light. If you're unsure, Saturday cupping lets you taste them all before you buy.

Whole bean or ground

Tell us how you brew at home — we'll dial the grind size for espresso, filter, plunger or AeroPress and grind it on the spot.

Pick your size

250g bags suit a week or two of home brewing. 1kg bags are for the regulars who already know which one they're coming back for.

Every bag is labelled with its roast date. We'll always tell you when the next batch is coming if the freshest stock matters to you.

We'll tell you how to get the most from every bag.

We've spent a lot of time at the grinder. When you buy a bag over the counter we'll talk you through dose, ratio, water temperature and what to adjust if it's not quite right yet. No jargon unless you want it.

Saturday cupping

Taste all four roasts before you commit to a bag.

Every Saturday morning we lay out all four house roasts for a free public cupping session. It's the best way to find which one belongs in your kitchen — and to understand what those tasting notes actually mean in the cup.

No booking required, no ticket, no catch. Show up on a Saturday morning, pick up a spoon and start tasting.

Saturdays, 7am–1pm

We run the cupping table throughout the morning while the bar is open. Come early for the freshest pour, or later for a longer conversation.

Good to know

Questions about the roasts

How fresh are the beans when I buy them?

We roast twice a week on-site, so stock turns over fast. Every bag is labelled with its roast date. For espresso we recommend resting beans 5–10 days post-roast; for filter, 3–7 days is usually the sweet spot. Ask at the counter and we'll tell you exactly when the batch you're holding was roasted.

Can I buy online?

Not yet. Every bag currently leaves the bar in Fremantle, which means you get it fresh and we get to answer any questions you have about how to brew it. If you're not local and want to discuss options, email us at [email protected] and we'll see what we can do.

Will you grind it for me at the bar?

Yes — just tell us what brewer you're using at home. We'll grind to the right coarseness for espresso machine, filter, AeroPress, plunger or stovetop. If you're not sure, we'll ask a few questions and make a call together.

What's the difference between Driftline and Harbourmaster?

Driftline is roasted darker — it's built for espresso and milk drinks, with a cocoa and molasses character that stays grounded under pressure. Harbourmaster sits in the middle: medium-bodied, sweet caramel finish, works well both as filter and espresso. If you're used to a classic café flat white, Driftline. If you want something you can brew different ways, Harbourmaster.

Does First Light change often?

It changes when the green stock does — which might be every few months or every few weeks depending on supply. The roast level varies to suit the lot. Current flavour notes and origin are always listed on the bag and behind the counter. Saturday cupping is the quickest way to taste what's on it right now.

Do you offer wholesale or café supply?

We keep our production deliberately small, which limits how much we can supply consistently. If you're a local café or small business interested in a conversation, reach out at [email protected] and we'll be honest about what's possible.
